Olio Santo is an ancient term meaning Oil of the Saints and refers to a time when the first press of the olives, the best oil, was allocated to the church for use in religious ceremonies. Today, Olio Santo extra virgin olive oil is still the finest oil of the harvest, cold-pressed and blended in small batches to insure consistent quality, flavor, and freshness. This versatile olive oil can be used on salads, in cooking, as a finishing oil, or enjoyed simply with a fresh baguette.
